2 teaspoons shredded sweetened coconut
cup low-fat or part-skim ricotta cheese
1 no-calorie sweetener packet
teaspoon coconut extract

Directions

It's a hot summer Saturday. The closest thing to the tropics near you is your neighbor's kiddie pool. Oh well... You can make your own summer paradise with this tropical treat.
